Production

We work diligently on our grapes during the production process.In the production of our high-quality wines, we ferment in casks using 150 pieces of 225-liter French oak barrels with the Oxoline patented system for fermentation in the barrel. With the fermentation in the oak barrels, the interaction and integration of the oak, must, shell and seed is done at the best level.Our winery has a total steel tank capacity of 9000 hl, as well as 24 French oak tanks of 1720 hl

At Caeli Winery, we use traditional methods such as gravitational filling and Pigeage, which provide a more precise application with less mechanical impact, without using a pump. In addition, we make maximum use of the benefits of technology, such as ensuring temperature control, which is very important for quality, and ensuring optimum conditions in the application of traditional precision pressing methods

The steel and wooden tanks we use for maceration allow us to obtain wines with different properties. Steel tanks are completely inert, oak tanks have micro-level oxygen permeability. All French oak barrels, our wooden tanks are smaller than our steel tanks. These oak tanks, which are more difficult to sterilize than steel tanks and have a maximum service life of 15 years, contribute greatly to the production of quality and original wines during the maceration and fermentation stages.

We are constantly working to keep up with the ever-evolving winemaking industry. At Caeli Winery, we embrace change and innovation, while adopting the traditional way of doing business, and advancing tradition and technical development together. We carry out the fermentation in both traditional oak and modern steel tanks.

At Caeli Winery, we mature our wines for 6 – 24 months in our specially designed cellar, which is climatized with the help of mechanical equipment and where all appropriate conditions are met. Our cellar has a total capacity of 3500 oak barrels. The pool, located just above our cellar, not only enriches the winery aesthetically, but also helps to provide the necessary humid environment for the cellar. All our red wines are bottled after maturing in barrels.

A strong tannin structure and a solid skeleton provided with the vitality and complexity to support it are necessary for quality wine and good aging. All features such as grape quality, grape variety, production technique, production year and storage conditions determine the aging period. For aging wines must be stored horizontally, at approximately 12 degrees and 70% humidity, in an environment that is not exposed to light, vibration and temperature changes. Wine cellars should be dark and stored wine should not see light. At Caeli Winery, we ensure the longevity of our wines with the use of quality cork suitable for aging, the use of bottles that will prevent light transmission and provide maximum heat insulation.
