Caeli project was established under the roof of Toksöz Group in 2011 to operate in the field of viticulture.
Stress-based quality grapes are grown with Good Agricultural Practices in our plant, which is planted at a density of 1m x 1m. Caeli, which has one of the most special vineyards of Turkey and the world, also operates in the field of vineyard tourism in its 21-room boutique facility called Hotel Caeli in Eceabat, Çanakkale. Hotel Caeli, which has artistic details in every corner and the works of many world-famous artists, also serves wine lovers with its interior design and decoration.
Gate of Heaven (Latin ‘Porta Caeli’), designed by Seçkin Pirim, one of Turkey’s most important sculpture artists, and also an inspiration for our logos and labels, is positioned right in front of our vineyards and opens the doors of heaven to these unique lands, just like its meaning.
By adopting the principle of sustainability, we give back to nature what we take from nature.
We ensure that every step of the winemaking process is in harmony with our environment. We use sonic sound systems to protect against bird damage in our vineyards, and a wire mesh system to protect from wild animals.
In our vineyard, which is monitored 24 hours with sonic devices and camera traps, grape pomace and branches after pruning are converted into organic feed and fertilizer. We protect the natural life in our vineyards.
By using photo traps, we pay attention not to interfere with the pests in the field until the vineyard reaches the danger threshold. We protect our deep water resources and vineyards by working in partnership with international standards and inspection companies.
We use the pomace of the processed grapes as organic feed in our farm as perma culture. At the same time, we use the branches formed as a result of pruning in our vineyards as organic fertilizers in the vineyard.
OUR VALUES
We care about quality from the grape growing stage to the bottling stage of the wine. We monitor all of our vineyards at meteorological stations for 24 hours to control humidity, temperature, wind and precipitation. We use the traditional manual mixing method when mixing our grapes. Thanks to this method, it gives us the best results during crust and must integration. Due to the fact that our winery is designed in accordance with the principles of gravity system, the sorted grapes are conveyed to the tanks by the force of gravity, without the pumping process, which reduces the quality of the grapes and causes wear, via the mobile tank.
Progress in winemaking in recent years; The name Michel Rolland, which has an undeniable influence, comes to the fore when it is considered that it is realized through global communication and transfer of knowledge about wine.
Michel Rolland, who said that this is a good place to make very good wines as soon as he sees the Caeli lands, has been sharing his valuable knowledge about wine with us since the first day of the Caeli project. Born into a wine producing family in Bordeaux, Rolland grew up in Le Bon Pasteur castle in Pomerol. He founded a wine laboratory with Dany, whom he met and later married while studying oenology at the University of Bordeaux. Rolland, who started to provide consultancy services in the field of wine production, had many clients and clients, including Bond and Harlan from Napa, Ornellaia from Italy, Lapostolle from Chile and Grover from India. The wines made under the guidance and experience of Rolland were appreciated.
